Where the scent comes from
Star anise is the fruit of an evergreen tree from southern China and Vietnam. It is harvested green and dries into the star-shaped case with usually eight chambers that gives it its name – it is not related to the anise we know at home, it merely shares the aroma compound. Red sandalwood comes from a completely different tree than the white kind and was used for centuries mainly as a dye, for textiles and for the tilaka mark on the forehead.

When it suits
In autumn and winter, on quiet afternoons. The scent is sweetish and spicy and reminds some people of Christmas, without being as unmistakable as cinnamon.
